Well, you probably aren't going to find anyone because Spark is made specifically for what it does. It is pulled into a new laravel 5.3 install so that you can do all of those things you normally do with a Laravel app. The Spark part is only for subscription billing on a free, monthly or yearly plan. If you want more control, you are in luck because Spark is built on top of Laravel Cashier. You can utilize anything in Cashier that you want including one-time payments. On a side note, Spark allows for an api as well. My Spark apps use Spark for what is designed for and nothing else. Anything else is built into the surrounding Laravel 5.3 and Cashier frameworks. Hopefully, this will provide enough background for you.

Anyone know how to expand the spark app
The Spark app in terms of billing / scaffolding seems to be geared towards those who wish to offer subscription based application portals.
However we all know that Laravel app itself do many things (api, cms, ecommerce, etc), has anyone been able to (or know someone) who utilize Laravel Spark for something else than a subscription based invoicing system?
