Vite Production Workflow

Just polling the room on production workflows being used for Vite. I keep tripping up, which means my workflow is wrong. What is everyone else doing?

I am using forge and envoyer, because I want to write code, not be a sysadmin. But fiddling with vite config and valet on my local machine means I end up messing up my prod because my workflow isn't solid. Should I just run npm run prod in my envoyer deployment hooks? What are other people doing with dev/production vite configs? I feel like my dev config keeps changing as people suggest different and better ways to handle https in development with dnsmasq and valet.....
