Just in case anyone is looking in future, the best way I have found to do this is just to log out what you want. And then view the logs on vapor.
If anyone has a better way, I would love to know.

Laravel Vapor Queues
Hi
How do you monitor queues on Laravel vapor?
I know it uses sqs, but is there a way to monitor it?

It's a shame you can't configure a redis / horizon combination.
