Creating subscriptions manually?

I want to add functionality to the kiosk which enables me to assign subscriptions to users, this would allow me to test things quicker and allow me to assign subscriptions for free.

I will setup a form etc and controller, I just wondering which methods I use to assign subscriptions? There doesn't seem to be anything in the docs for this.
