5.6 is stable. The only issue you may run into is packages not being updated to support it yet.

Most stable version of laravel?
I am new to Laravel. I am going to develop One web application in laravel. But bit confusion which version should I use? Can anyone give/guide me demo code for stable version?

laravel 5.5 is the new LTS version I would recommend you to use that

Do not be afraid about start with the 5.6. I think there is not too many differences in basics. Of cource you can use course Laravel 5.4 from scratch. As you finish that take "What's new in Laravel 5.5" (i suppose Jeffrey will publish 5.6 aswell)
