laravel/ui works in Laravel 8 with the latest version. It is not recommended though as it is deprecated.
Use Laravel Fortify instead: https://github.com/laravel/fortify

Hello to everyone
The use of ui in Laravel 8 is not recommended and even it has been removed. I do not want to use jetstream in my new project.

Yes 👏 i have replaced laravel/ui with Fortify in a couple of projects and it’s pretty easy. The docs for Fortify are improved last week.
Remove laravel/ui and install Fortify and follow the readme on GitHub. Then remove the old Auth Controllers and remove the Auth routes.
When Laravel 8 was released i was a bit confused with Jetstream, Fortify and the laravel/ui situation but actually i think it’s an improvement right now. 🤟
