Have you thought about having 2 separate plans? One plan in Stripe for unlimited and one plan per seat? You could also click the add another price for the plan in Stripe for the per seat vs the unlimited.

"Unlimited" plan with per-seat pricing?
I am trying to figure out if it's possible to setup Spark (latest stripe version) to support an "Unlimited Seats" plan in addition to per-seat billing? We have a percentage of very large users that would benefit from this type of arrangement. Right now, I cannot find a way to configure both. Anyone with some experience here?

This would be a perfectly acceptable solution…. But how would I configure this?
