Run valet with 2 separate sites under the same root domain + subfolders

We have recently moved back to valet and are trying to replicate our production env locally. Not sure its going to be possible, but we need to have 2 separate sites, but running off the same root domain like this:

• domain.test (UK site)
• domain.test/us (US site)

Although the sites can communicate we run them as separate server instances, db etc etc

It would be really helpful to replicate this locally for testing.
